Marinate the chicken
- Combine browning sauce, all-purpose seasoning, garlic powder, onion powder, dried thyme, salt, and pepper with the chicken pieces, then rub to coat evenly. Marinate for at least 2 hours or overnight in the refrigerator, covered, so the flavors soak in deeply.
Caramelize and brown
- Heat vegetable oil in a large skillet or Dutch oven over medium heat, then add the sugar and let it caramelize until golden brown. Stir occasionally and watch closely to avoid burning.
- Add the marinated chicken pieces to the caramel oil and cook until deeply golden on all sides, turning as needed. Remove the chicken to a plate once browned.
Simmer the stew
- In the same pot, sauté onion, bell peppers, garlic, green onions, and scotch bonnet for 4 minutes until aromatic and slightly softened. Keep the heat at medium so the vegetables cook without scorching.
- Return the browned chicken to the pot, add chicken broth, and bring everything to a boil. Scrape up any browned bits from the bottom for extra flavor.
- Reduce heat to low, cover, and simmer for 35-40 minutes until the chicken is fall-apart tender and the gravy is thick. Uncover for the last few minutes if you need to reduce to your preferred thickness.
Serve
- Ladle brown stew chicken into bowls and serve with rice, then top with fresh thyme. Garnish at the end for the brightest herbal aroma.
Notes
Pro tip: caramelized sugar can go from golden to burnt quickly—keep the heat at medium and caramelize only until golden brown. Store leftovers covered in the refrigerator up to 4 days; freeze up to 3 months for best quality. For a lighter option, reduce vegetable oil to 1 tablespoon and use a non-stick Dutch oven to reduce sticking while still browning.
