Sauté aromatics
- Heat 2 tablespoons olive oil in a large pot over medium heat, then add onion and carrots. Sauté for 5 minutes, stirring now and then, until the vegetables soften and look glossy.
Bloom spices
- Add garlic, cumin, turmeric, coriander, paprika, and cayenne to the pot. Cook for 2 minutes, stirring frequently, until the spices are very fragrant.
Simmer lentils
- Stir in rinsed red lentils and vegetable broth, then bring the mixture to a boil. Once boiling, reduce heat to maintain a gentle simmer.
- Simmer for 25-30 minutes, stirring occasionally, until the lentils have completely dissolved and the soup looks thick and creamy.
Blend to silky smooth
- Blend the soup with an immersion blender until smooth and fully emulsified. Stop when no visible lentil bits remain and the texture looks velvety.
Finish with lemon
- Stir in lemon juice and lemon zest, then season with salt and black pepper. Taste and adjust so the soup has a bright, balanced lemon finish.
Make crispy shallots
- Heat olive oil in a small pan and fry thinly sliced shallots until crispy and golden. Watch closely and remove when they turn deeply golden and fragrant.
Serve
- Ladle soup into bowls and top each serving with crispy shallots. Finish with fresh parsley and a drizzle of olive oil, plus extra lemon if you like.
Notes
Pro tip: simmer until the lentils are fully dissolved, then blend while hot for the smoothest texture. Store leftovers in an airtight container in the fridge up to 4 days; freeze up to 3 months (reheat gently and add a splash of broth or water if thick). For a dietary swap, you can use low-sodium vegetable broth and add salt gradually to control sodium.
