Ingredients
  

Italian sausage
  • 1 lb Italian sausage
Cauliflower
  • 1 cauliflower Cut into florets.
Kale
  • 4 cups kale Chopped.
Onion
  • 1 onion Diced.
Garlic
  • 4 cloves garlic Minced.
Chicken broth
  • 4 cups chicken broth
Heavy cream
  • 1.5 cups heavy cream
Italian seasoning
  • 1 tsp Italian seasoning
Red pepper flakes
  • 0.5 tsp red pepper flakes
Parmesan
  • 0.5 cup parmesan Grated.
Salt and pepper
  • 0.5 salt and pepper To taste.

Method
 

Brown sausage and build the base
  1. Brown the sausage slices in a large pot over medium-high heat until browned, then remove and set aside.
  2. Sauté the onion in the sausage fat for 4 minutes, then add the garlic and Italian seasoning and cook for 1 minute.
Simmer cauliflower until tender
  1. Add the chicken broth and cauliflower to the pot, then simmer for 15-18 minutes until very tender, stirring occasionally.
  2. Blend about half the soup smooth, then stir the blended portion back into the pot.
  3. Pour in the heavy cream and stir to combine.
Wilt kale and finish
  1. Add the kale, sausage, red pepper flakes, and parmesan, then cook for 5 minutes until the kale wilts.
  2. Season with salt and pepper to taste and serve hot.

Notes

For the smoothest texture, blend only about half the soup so you keep some cauliflower chunks. Store covered in the refrigerator for up to 4 days; reheat gently, adding a splash of broth if it thickens. Freezing is not recommended because the cream may separate after thawing. For a dairy-light swap, use half-and-half instead of heavy cream and add a little extra parmesan to maintain richness.
