Ingredients
  

Chicken thighs and base broth
  • 1.5 lb chicken thighs (bone-in for richest broth) Bone-in gives the richest broth; discard bones/skin after simmering.
  • 4 carrots, sliced
  • 4 celery, sliced
  • 1 onion, diced
  • 8 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
Finish and noodles
  • 1 tbsp lemon juice Add near the end to keep it bright.
  • 1 tbsp honey Stirs in at the end for a gentle sweetness.
  • 8 oz egg noodles Cook 6–8 minutes until tender.
  • 1 fresh parsley and lemon for serving Serve with extra lemon and fresh parsley.
  • 0.1 salt and pepper to taste Season after adding lemon and honey; adjust to preference.

Method
 

Build the soup
  1. Combine chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, thyme, and oregano in a large pot. Heat over high until it comes to a boil, then maintain a gentle simmer.
  2. Simmer for 25-30 minutes until the chicken is very tender. Keep the surface at a steady simmer and ensure vegetables soften.
Shred and finish
  1. Remove the chicken from the pot and shred the meat. Discard bones and skin, then return the shredded chicken to the pot.
  2. Add egg noodles and cook for 6-8 minutes until tender. Stir occasionally so noodles don’t stick.
  3. Stir in lemon juice and honey, then season with salt and pepper to taste. Simmer 1-2 minutes just to warm through and blend flavors.
  4. Serve hot with extra lemon and fresh parsley. Ladle into bowls so the golden broth, chicken, and noodles are visible.

Notes

Pro tip: If your chicken thighs give you a lot of fat on top, skim it after the first simmer so the broth stays golden and clean. Store leftovers in an airtight container in the fridge up to 3 days; freeze up to 2 months, but keep in mind noodles can soften—reheat gently on the stove with a splash of broth. For a lighter option, use low-sodium chicken broth and reduce the honey to 1/2 tablespoon.
